It’s that time of year when you want to come home to something warm with minimal effort whilst you thaw your toes out by a nice warm fire. This little beauty will fit the bill!
Get out the slow cooker and let it work its magic!
We make this recipe with sausages and bacon from one of our lovely traders, keeping it local and fresh.
Take some sausage and slice them into inch long pieces.
Chop the bacon into chunks.
Chop a couple of red onions into decent-sized chunks.
Chop up a few carrots, again reasonable-sized chunks.
Grab a handful of whatever potatoes you have about. Chunk them as well, with skins.
Get a couple of tins of beans (haricot, borlotti, cannelini) and a tin of tomatoes.
Put everything except the tinned goods into a large frying pan/wok, and brown for a few minutes.
When browned, add with the tinned goods (draining the beans first), and some paprika, turmeric and any other herbs/spices you fancy.
Turn slow cooker to low, and set it going for 6-8 hours.
Come home and enjoy with crusty bread, salad, or on its own!
